We can define it as an animal of the porcine species without distinction of sex, which has been fed only on mother’s milk from the time of birth until reaching the established weight and age.
The characteristics that differentiate the “Cochinillo de Segovia” from any other suckling pig are the following:
- Only farms belonging to the province and that are exclusively engaged in raising suckling pigs protected under this designation can produce “Cochinillos de Segovia”.
- These suckling pigs must be born and raised on these farms.
- The mother sows are fed based on top quality cereals that result in excellent milk production, which will be the exclusive food of the suckling pigs.
- They will have a live weight of between 4.5 and 6.5 kg, and their maximum age will be 21 days, which means excellent flavour.
